  • 1.75 cups 1 ¾ cups graham cracker crumbs About 12 full sheets
  • 0.5 cups ½ cup unsalted butter, melted
  • 0.25 cups ¼ cup granulated sugar
For the Filling
  • 2 cups 2 cups fresh strawberries, hulled and sliced Use fresh strawberries for best flavor
  • 1 cups 1 cup heavy whipping cream (or cool whip)
  • 8 ounces 8 ounces cream cheese, softened
  • 0.5 cups ½ cup powdered sugar Adjust for sweetness preference
  • 1 teaspoon 1 teaspoon vanilla extract
  • 0.5 cups ½ cup strawberry preserves or jam For spreading on top
For Garnish (Optional)
  • 1 cups Additional fresh strawberries For decoration
  • Mint leaves For garnish

Method
 

Prepare the Crust
  1. Combine graham cracker crumbs, melted butter, and sugar in a bowl, mixing until fully coated and resembling wet sand.
  2. Press the mixture into the bottom and sides of a 9-inch pie dish, ensuring an even layer.
  3. Chill the crust in the refrigerator for about 30 minutes to set.
Make the Filling
  1. Beat the softened cream cheese in a mixing bowl until smooth.
  2. Gradually add powdered sugar and vanilla extract, mixing until fully incorporated.
  3. In a separate bowl, whip the heavy cream until soft peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until fully combined.
Combine Strawberries with Filling
  1. Gently fold in the sliced fresh strawberries, taking care not to crush them.
Assemble the Pie
  1. Remove the crust from the refrigerator and spoon the strawberry mixture into the crust, spreading it evenly.
  2. Top with strawberry preserves, spreading gently over the strawberries.
Chill the Pie
  1. Cover the pie with plastic wrap and refrigerate for at least 4 hours or overnight to let the flavors meld.

Notes

To prevent the pie from absorbing odors, keep it covered in the refrigerator. It's ideal to enjoy within two days.
