Preparation
- Chop the onion, garlic, and bell pepper. If using fresh pineapple, cut it into small, bite-sized pieces.
Cooking
- In a large skillet or pot, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the chopped onion and bell pepper. Sauté until tender, about 3-5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the uncooked rice, chicken broth (or water), diced pineapple, and soy sauce to the skillet. Stir everything together.
- Place the cooked chicken back into the skillet. Bring the mixture to a simmer, then cover and reduce heat to low. Let it cook for 15-20 minutes, or until rice is tender and has absorbed the liquid.
- Once rice is cooked, fluff it with a fork and garnish with fresh parsley if desired. Serve warm and enjoy!
Notes
Use leftover chicken for quicker preparation, add more veggies for nutrition, or spice it up with hot sauce for a kick.
