  • 1 pound ground beef (or turkey for a lighter option)
  • 1 cup breadcrumbs
  • 2 pieces eggs
  • 1 large onion, finely chopped
  • 1 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt Adjust to taste
  • 1 teaspoon pepper Adjust to taste
Optional Ingredients
  • 1 cup shredded cheese For added flavor
  • 1 cup diced vegetables (like bell peppers or carrots) For added nutrition
  • as needed barbecue sauce or ketchup for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or line it with paper liners.
  3. In a large bowl, combine the ground meat, breadcrumbs, eggs, chopped onion, milk, Worcestershire sauce, salt, and pepper. Mix until just combined.
  4. Fold in the optional ingredients like cheese or vegetables, if desired.
  5. Use a spoon or ice cream scoop to fill each muffin cup about ⅔ full.
  6. Drizzle barbecue sauce or spread ketchup on top of each muffin.
Baking
  1. Place the muffin tin in the preheated oven and bake for about 20-25 minutes or until the internal temperature reaches 160°F (70°C).
Serving
  1. Let the muffins cool for a few minutes before removing them from the tin. Serve warm.

Notes

Meatloaf muffins can be batch cooked and frozen for future meals. Serve with a fresh salad, mashed potatoes, or roasted vegetables.
