Preparation
- In a bowl, whisk together the soy sauce, brown sugar, pineapple juice, rice vinegar, ginger, garlic, and sesame oil until the sugar dissolves completely.
- Place the chicken thighs in a resealable plastic bag or a glass dish and pour the marinade over the chicken, ensuring each piece is well coated. Seal and refrigerate for at least 2 hours, preferably overnight.
Cooking
- Preheat your grill to medium-high heat (about 375-400°F). If using a charcoal grill, allow the coals to burn until covered with ash. Oil the grill grates to prevent sticking.
- Remove the chicken from the marinade and allow excess liquid to drip off. Season lightly with salt and pepper. Grill skin-side down for about 6-7 minutes or until crispy and browned.
- Flip the chicken and grill for an additional 6-7 minutes.
- During the last few minutes of grilling, brush with reserved marinade brought to a boil for safety.
- Check internal temperature to confirm chicken has reached 165°F. Remove from grill and let rest for 5 minutes before serving.
Serving
- Serve hot, garnished with green onions and sesame seeds. Pair with steamed rice or salad.
