Ingredients
  

Chicken Marinade
  • 4-6 pieces chicken thighs (bone-in, skin-on recommended) These retain moisture better than boneless cuts.
  • ¾ cup soy sauce Adds umami flavor.
  • ¾ cup brown sugar Caramelizes beautifully on the grill.
  • ¾ cup pineapple juice Contributes sweetness and acidity.
  • ¼ cup rice vinegar
  • 2 tablespoons freshly grated ginger
  • 3 cloves garlic, minced
  • 1 tablespoon sesame oil (optional) For additional flavor.
  • Salt and pepper to taste
  • Green onions and sesame seeds (for garnish) Adds visual appeal.

Method
 

Preparation
  1. In a bowl, whisk together the soy sauce, brown sugar, pineapple juice, rice vinegar, ginger, garlic, and sesame oil until the sugar dissolves completely.
  2. Place the chicken thighs in a resealable plastic bag or a glass dish and pour the marinade over the chicken, ensuring each piece is well coated. Seal and refrigerate for at least 2 hours, preferably overnight.
Cooking
  1. Preheat your grill to medium-high heat (about 375-400°F). If using a charcoal grill, allow the coals to burn until covered with ash. Oil the grill grates to prevent sticking.
  2. Remove the chicken from the marinade and allow excess liquid to drip off. Season lightly with salt and pepper. Grill skin-side down for about 6-7 minutes or until crispy and browned.
  3. Flip the chicken and grill for an additional 6-7 minutes.
  4. During the last few minutes of grilling, brush with reserved marinade brought to a boil for safety.
  5. Check internal temperature to confirm chicken has reached 165°F. Remove from grill and let rest for 5 minutes before serving.
Serving
  1. Serve hot, garnished with green onions and sesame seeds. Pair with steamed rice or salad.

Notes

For best results, allow longer marinating time and consider using a gas grill with controlled temperature to avoid burning. Let chicken sit at room temperature for 30 minutes before grilling.
