  • 3 ripe bananas The riper, the better.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar You can reduce this if you prefer less sweetness.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 cup chocolate chips or chopped nuts Optional.

Preparation
  1. Preheat your oven to 350°F (175°C). This is crucial for even baking.
  2. In a mixing bowl, mash the ripe bananas until smooth. Leave some small chunks for texture if you like.
  3. Stir the melted butter into the mashed bananas.
  4. Add the baking soda and salt, mixing well.
  5. Stir in the sugar, beaten egg, and vanilla extract.
  6. Gently fold in the flour and cocoa powder until just combined. Avoid overmixing.
  7. If you’re using chocolate chips or nuts, fold them into the mixture now.
  8. Grease your 9×5-inch loaf pan or line it with parchment paper for easy removal.
  9. Transfer the batter to the prepared pan and smooth the top.
  10. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  11. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Use overripe bananas for the best flavor. Store wrapped in plastic wrap or foil at room temperature for a couple of days, or freeze for up to three months.
