  • 1/2 head cabbage, shredded
  • 1 medium red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced (or 1 teaspoon ground ginger)
  • 1/4 cup soy sauce (low sodium preferred)
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Optional: green onions and sesame seeds for garnish

  1. Start by slicing the chicken and veggies to ensure even cooking.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
  2. Add the sliced chicken, season with salt and pepper, and stir-fry for about 5-7 minutes until browned and cooked through.
  3. Add the minced garlic and ginger once the chicken is almost cooked, and stir until fragrant, about 30 seconds.
  4. Mix in the shredded cabbage and sliced bell pepper, cooking for another 5-7 minutes until the cabbage is wilted and the peppers are tender.
  5. Pour in the soy sauce and sesame oil, stir to combine, and cook for another 1-2 minutes.
  6. Serve hot, garnished with green onions and sesame seeds if desired.

Notes

This dish is great for meal prepping. Marinate the chicken for added flavor, and feel free to substitute with other veggies. Avoid overcrowding the pan for even cooking.
