  • 1 pound Chicken breast Cut into bite-sized pieces
  • ½ head Cabbage Green or Napa cabbage works best
  • 2 tablespoons Vegetable oil Canola or sunflower oil recommended
  • 2-3 tablespoons Soy sauce Adjust to taste
  • 2 cloves Garlic Minced
  • 1 inch Ginger Minced
  • 1 medium Bell pepper Optional for added sweetness and color
  • 1 medium Onion Sliced
  • 1 teaspoon Sesame oil For drizzling at the end
Optional Ingredients
  • 1 cup Broccoli Optional for variation
  • 1 cup Snap peas Optional for variation
  • 1 block Tofu For vegetarian option

Method
 

Preparation
  1. Wash and slice the cabbage, bell peppers, and onion. Cut the chicken into bite-sized pieces. Mince the garlic and ginger.
Cooking
  1. In a large skillet or wok, heat vegetable oil over medium-high heat until shimmering.
  2. Add the chicken pieces, seasoning with salt and pepper. Stir-fry for 5-7 minutes until cooked through and browned.
  3. Push chicken to one side, add another tablespoon of oil, then add minced garlic and ginger. Sauté for 30 seconds.
  4. Add sliced onion and bell pepper. Stir-fry for 2-3 minutes until softened.
  5. Add cabbage along with soy sauce. Stir-fry for another 5 minutes until cabbage wilts and softens but retains crunch.
  6. Drizzle sesame oil over the stir-fry just before serving.
  7. Serve hot, either alone or over rice or noodles.

Notes

For best results, cut ingredients evenly and avoid overcrowding the pan. This dish can be prepped ahead of time for busy weeknights, and flavors can be adjusted to your liking.
