- Gather all your ingredients.
Cook the Chicken
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add them to the skillet and cook until browned, about 5-7 minutes. Remove the chicken and set it aside.

Combine and Simmer
- Lower the heat and stir in the sour cream until well combined. Return the chicken to the skillet, let it simmer for another 5 minutes, and adjust the seasoning with salt and pepper as needed.
Serve
- Serve the Chicken Mushroom Stroganoff hot over cooked egg noodles or rice, garnishing it with chopped parsley.
