- In a large skillet over medium heat, cook the chopped bacon until crispy. Remove it with a slotted spoon and let it drain on paper towels.
- In the same skillet, add the ground beef, diced onion, and minced garlic without draining the fat. Season with salt and pepper, and cook until the beef is browned and the onion is translucent.
- Stir in the rice and beef broth, scraping up any browned bits from the bottom of the skillet.
- Add the diced tomatoes and Worcestershire sauce, stirring everything to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the rice is tender and has absorbed the broth.
- Once the rice is ready, remove the skillet from the heat and stir in the cheddar cheese until melted. Top with the reserved bacon.
- Garnish with chopped green onions or pickles if desired, then serve hot.
